No country in the world consumes more eggs per person than Mexico — on the order of an egg a day for every resident. The egg is not merely a breakfast option there; it is a staple at the center of the national diet, which makes egg inflation politically sensitive to a degree few other countries experience.

Mexico learned this early. The 2012 H7N3 avian-influenza outbreak in Jalisco — the country's principal laying region — killed or forced the culling of tens of millions of birds and produced the original "egg crisis," prompting government intervention and emergency imports. The episode continues to shape how quickly Mexican authorities respond to poultry disease today.

Production is concentrated and industrial, dominated by Jalisco and Puebla, and proximity to U.S. grain keeps feed costs comparatively manageable. In 2025 Mexico was also among the countries shipping eggs north during the U.S. shortage.
